Garlic Scape Pesto Chicken Waffle Sandwich

One day someone told me you could make PESTO out of them. It truly is a brilliant way to utilize this summer crop. Plus it is super easy and you can customize it to your tastes.
Garlic Scape Pesto
1lb garlic scapes, cut in to 1-2 inch pieces
1 1/4 cups parmesan cheese, grated
1 cup of good quality olive oil, maybe more if needed
1T lemon juice
1/2 cup of chopped nuts of choice (walnuts, almonds)
Pepper to taste
Place the garlic scapes, cheese, lemon juice and nuts in to a food processor. Blend together. Slowly drizzle in the olive oil until you reach the consistency you like. Season with pepper.
Now is the good part.... Mix the pesto with cooked shredded chicken for a delicious chicken pesto salad.
Warm a Send Me Sugar Waffle in the oven (350F for 2-4 mins). Cut the waffle in half. Assemble your sandwich with pesto chicken, lettuce, and tomatoes. Serve with a side of chips. Lunch is served!
